You may not expect to find a cheese mecca in an New London County industrial park next to a CrossFit gym, but don’t drive by too quickly or you’ll miss out.
Mystic Cheese Company opened its first storefront in February, offering a cut-to-order cheese shop with cheese and charcuterie boards, a grilled-cheese bar, beer, wine and cider. The Groton space’s seating area also features a window into the new ripening room, where about 12,000 pounds of cheese sit aging to perfection.
